This is my roast, potatoes, and carrots I made for dinner this evening. I had a very busy day so I used a cast iron skillet with a lid. I used a 3 pound pork roast. On top of that I used a Great Valu seasoning pack. I just mix it with about 1/4 cup of water and pour on top of my roast.  Then I add about 8 potatoes that are quartered. Then I just add the small carrots, however many you like, put the lid on, and bake in the oven at 350 for about 2 1/2 hours.
